Nope it’s not Eurotrip, mainly because I’ve not heard of that movie!

One more clue. The trip took place in the Summer.

In that case, I'm gonna take a few guesses and see which one hits... let me know if any of them are right. - Road Trip - National Lampoon's European Vacation

No, sorry. I’ve got a feeling you may not have heard of it.
It was “Summer Holiday”.

Ah yes, I just googled it. It was made in 1963... way before my time! No wonder I couldn't figure it out! Since I failed the question, it's only fair you get another go, Roverman.

20 years before my time too but UK TV companies seemed to like showing it every wet Bank Holiday for about a decade!
What about this?
Beautiful brunette jilts simpleton fiancé at the altar. Prospective father-in-law takes offence to this and gives chase. Eats a Diablo sandwich on the way. Meanwhile two brothers are minding their own business making a delivery and get embroiled in the whole thing.

The Runaway Bride? Forever My Girl? Jilting Joe? Probably all wrong. I bet it's another British film.

1970s, American, they made more than one. The groom’s father is a cop.

Ooh Teeks I dunno luv. Plot sounds familiar, but I dontvwatch many yank films. A huge guess would be Cannonball Run. And I only guess that because I know there were two and I didn't watch either one.

Father of the groom orders a Diablo sandwich during the film. I have no idea what it is either!
Wendy-you are on the right track with Cannonball as the lead actor was in both sets of films.
