EastEnders and Neighbours seem to be 2 soaps that have stayed true to their roots, with The Archers 3rd.
Emmerdale and H&A have changed the most as they are so far away from the original premise. When Emmerdale began it was a show about a farming family with a huge farming backdrop as well as some non farming drama. Now it is about the village with no farming scenes or farming storylines whatsoever, and just endless crime/medical/affairs stories. H&A started off as a show about fostering but that has also bee eradicated for the same style that Emmerdale now has.
Not sure about Hollyoaks as I only watch casually.
And as for Corrie I feel it is fast on the tail of Emmerdale and H&A. Corrie used to be about working class Northern back street families and kitchen sink drama, now it is about teens/gangsters/criminals, and much of the focus on Victoria Street/the apartment block and that ridiculous bistro/shopping parade.

I think if Emmerdale had stopped as a farm, it would not be on our screens now and be the second most watched soap.
